渣肉,其實不外乎是 蕪湖 版本的粉蒸肉,將豬肉切塊腌制裹上渣粉(即製作粉蒸肉的米粉),再放於米飯上蒸熟即可,一般可添加些千張之類的食材。儘管無論選材還是製作,渣肉蒸飯都算不上複雜,但成品卻有著超乎想象的好滋味,一方面其中的渣肉與常見的粉蒸肉不同,粉薄肉瘦且腌制得相當入味,另外則是其下的米飯吸收了食材的汁水,味道也變得更加豐富。

無為 板鴨又叫做熏鴨,以麻鴨為主料,以多種中草藥、香料和調料入味製成,需先熏後滷,製作工藝精細而複雜,成品鴨肉顏色黃亮、肉大而肥瘦相間,口感相當地豐腴。直接食用時香味濃郁鹹度適中,亦可配些蒜塊蘸特製醬汁而食,進一步增添風味。買了小半隻鴨也有足足一斤,可味道實在優良,一氣呵成便吃掉。

蕪湖 食行,有一個遺憾不得不提,那就是穿行了諸多大街小巷,卻沒有找到傳說中的腰子餅。雖然不過是蘿蔔絲、藕絲與麵糊混合後油炸而成的腰子型油餅,總還是覺得眼見口嘗才能為實。不知道那些小攤,都藏到了哪裡呢。
