條件有限,冰冷的扒蹄並不能反映它最佳的味道,食用前加熱回溫乃更好的選擇。即便如此,也仍可大致感受扒蹄咸香入骨的滋味,皮的彈軟、筋的綿糯依舊強烈。唯一讓我不解的,大概是這一個豬蹄四十塊上下的價格了,即使放到北上,這都已經有些離譜。

有人說黃燜雞屬於魯菜,其實我並不認可,就像火鍋雞雖源於 滄州 ,你大概不會稱其為 河北 菜的一員,它們只是恰巧誕生於此,又生長成一種現象級的食物。但不可否認,它從 濟南 走出,成為今天遍佈全國的“外賣王者”,這確實是 濟南 獻出的一份大禮。
黃燜雞太平凡了,平凡到大概沒有一個到 濟南 的游人會專門吃上一頓黃燜雞。可當那一塊塊咸鮮微辣肉質柔嫩汁水濃稠的雞肉進入嘴裡時,我還是忍不住自說自話:“好吃是真好吃”。一頓填飽肚子的快餐,能夠提供這樣的味覺滿足,它的盛行總還是有所根基。
